Sunday (on Monday) Sevens – Week 56

Hi everyone, it’s time (already!) for this week’s Sunday Sevens, a little ode to randomness, those bits that don’t merit a whole post. For info about Sunday Sevens, please pop in to see the creator, Natalie, over at Threads & Bobbins. There are no real rules, just sharing of seven(ish) pictures.

Frankenstein Vegetarian Chili

It’s getting cold here….fabulous fall days that call for fabulous fall meals. Something quick and easy, such as this Frankenstein Vegetarian Chili, so named because it’s a conglomeration of recipes, tweaks and on-hand ingredients, resulting in a dish that is, frankly (sorry), fabulous! As I made it this time:

1 tbsp extra virgin olive oil
1 C. chopped onions
3/4 C. chopped carrots
3 cloves garlic, minced
1 C. ea chopped green and red bell pepper
3/4 C. chopped celery
1 tbsp chili powder
1 (28 oz) can diced tomatoes, undrained
1 (19 oz) can kidney beans, undrained
1 (11 oz) can whole kernel corn, undrained
1 tsp ground cumin
1 -1/2 tsp dried oregano
1-1/2 tsp dried basil
dash red pepper flakes

Heat oil in large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green/red pepper, celery, and chili powder. Cook until veggies are tender, about 6 minutes. Stir in tomatoes, kidney beans, and corn.  Season with cumin, oregano, and basil. Bring to a boil, reduce heat to medium. Cover and simmer for 20 minutes, stirring occasionally. Top with shredded cheese and serve with hearty bread.

Books and Movies

Haven’t finished the two books I’m reading, so I set this one aside and glance at it from time to time — hoping to get my yoga groove back. We’ve never seen this movie classic, so hubby and I finally watched it last night. Tennessee Williams certainly didn’t shy away from sensitive subjects.

Guess that’s it for now. Spending time getting house ready for my mother’s visit. She arrives on Wednesday and stays for three weeks! Who’s excited?

  1. Yes! Remake the gorgeous yellow scalloped dress Jen! You could easily mix the two patterns to create that. And your chilli looks lovely – I could eat it right now. As for your film choice – I would love to watch that too.

    • Thanks! I think I can… I think I can… it was my favorite dress of all time (well, except for the lime green/hot pink stripe number – my sister still reminds me how short it was). We did enjoy the movie, very intense. Good to finally see it.

  2. I think you and my husband must have been in cahoots – he made a vegetarian chilli on Friday which included lentils, haricot beans AND split peas. It was lovely but my digestive system is still in shock.
    Love to know how you get on with the scallops – my daughter made the dress with scalloped neck from the Tilly & the Buttons book and had difficulty with the lining – or facing – can’t remember which now. Lovely photo of you wearing the dress – will you make it in yellow now?

    • Haha! We just might have been. Mine only had one bean though, so maybe a little less “shocking”. But yum! I love haricot beans (or hairy-court verts as my mom used to say). Have lentils and split peas in the cupboard, need to make them up. I will check out the Tilly dress and see how frightening it is. And thank you for the compliment, I’ve been thinking yellow, if the right one comes along, but maybe something in a deeper color. What do you think?

  3. I love the name of your chilli! We have chilli once a week as we love it so much and I’ve never followed a recipe so I’m glad to see I use the same ingredients as you + paprika & crushed chilli flakes 🙂 Wow to the old picture of you – what great sewing inspiration!

    • Chili is a wonderful thing, isn’t it? Like soup…different each time. The trick is to remember what you change (paprika + crushed chili flakes = goodness!) And thank you! Now I guess those scallops are absolutely on my list.

  4. Your high school pic is lovely! Would be great to do a side by side pic of your new scallops when done! (Better late than never! I’ve not done mine for last week and DM wondering now if it’s a bit too late!) 😳

    • I did make it! I was quite fearless as a young sewist. Still planning to remake it, but might have to add just an inch or two (!!!) to the hem. And what a lovely compliment, thank you. 🙂
